[2025] Japan Knife TOKU Shop provides total support from knife sales to sharpening

My name is Okudaira, and I am the owner of Japan Knife TOKU Knives.
We personally inspect and select knives made by artisans from all over the country, focusing on knives from our local area of Sakai, Osaka, and deliver the finest selection of knives to you.

Do you think you have no choice but to buy a new knife?
Sharpening your knives will help them last longer. Japan Knife TOKU Shop offers full support from sales to resharpening.
This time, we will talk about Sakaitoku Knives.

## Japan Knife TOKU Shop is a store that offers total support from sales to sharpening.

#### Where do you buy your knives?

Recently, it has become possible to purchase inexpensive knives at home improvement stores, supermarkets, and 100 yen shops.
When a knife becomes dull, you buy a new one. I'm sure there are many people who do the same.
Also, many people think that knives sold at home improvement stores for less than 10,000 yen are sufficient, since they can be used for several years.

#### Do you know the types of knives?

Do you know the types of knives you can buy at a hardware store?
When we ask customers who come into our store, "What kind of knife are you looking for?" or "What kind of knife do you use?", most of them point to a knife on the shelf and say, "This is the kind of knife I have."
That knife is called a Santoku knife. It is a versatile knife that can be used to cut meat, fish, and vegetables, and was invented in Japan after the Meiji period.

### Differences between Santoku, Deba, Yanagiba and other knives and how to choose

Knives are originally designed to be used according to their purpose. The easiest to understand are the Deba knife and Yanagiba knife, which are considered Japanese knives. The best way to use them is to use a knife suited to each purpose: a Deba knife for cutting the head off a fish and filleting it into three pieces, and a Yanagiba knife for cutting the fish into fillets after filleting it.
However, in modern times, as meat has become more common and people want to use knives more conveniently, there is a growing need for all-purpose knives such as Santoku knives.

## Is it better to replace your knife or to keep using it for a long time?

In Japan, the culture of valuing things means that it is good to continue using one thing for a long time.
Nowadays, people often talk about SDGs , and you often hear the word eco.
From that perspective, I think using one knife for a long time is more suited to the modern situation.

#### If I use it for a long time it becomes uncut, what should I do?

If you continue to use a knife, it will lose its sharpness. This is true for any knife. It's the same for cheap knives, 100 yen knives, and high-end knives.
So, what can you do to keep using your knives for a long time?
By sharpening your knives, you can continue to use them for a long time.

## Is sharpening knives difficult?

Many people think that sharpening knives is difficult.
At Japan Knife TOKU Shop, we hold "Knife Sharpening Classes," and people who are sharpening knives for the first time can finish sharpening two knives in two hours. Even those who say it's difficult at first end up saying, "That was fun!" as they leave!
In other words, even those who have never sharpened a knife before can learn the technique.
Of course, if the knife has a large chip or is warped, specialized skills may be required, but anyone can perform daily maintenance on knives at home.

####No place to sharpen knives!

When it comes to sharpening knives at home, you'll usually use the kitchen.
However, there are a lot of dishes to wash in the kitchen! The counter next to the sink is also full of washed dishes, rice cookers, and other cooking utensils, so there is no space to sharpen a knife.
In such a case, we recommend you to use the rental sharpening booth at Japan Knife TOKU Asakusa store. You can rent a sharpening place. We call it "self-sharpening".
The idea is that you can freely use the space used for knife sharpening training during your free time.
The whetstones sold in the store are all available for unlimited use, from rough whetstones to medium whetstones, finishing whetstones, and ultra-finishing whetstones.
You don't have to buy a whole new set of whetstones, and you can try out a whetstone that you've always wanted to try!
I think this is a particularly useful service for people living in small urban areas.

### I still can't sharpen it properly!

I took a knife sharpening course. I also tried sharpening my own knives in a sharpening booth. But I still couldn't sharpen them properly. If you are one of those people, or if you don't have time to sharpen your knives in the first place, please use Japan Knife TOKU's knife sharpening service.
Japan Knife TOKU's knife resharpening service does not simply return the knife to like-new condition; we ask how you would like to use the knife and then resharpen it to suit that usage.
The sharpening method differs depending on the type of knife, and even for the same knife, the sharpening method changes depending on the purpose of use, such as "I often use it to cut hard objects" or "I often use it to cut meat."
For those who cannot come to our Asakusa store, we also offer resharpening by mail, so please consider that option as well.
