Santoku Knife

A standard household knife that can be used for meat, fish, vegetables, and anything else. The blade length is mainly 165mm or 180mm.
Choose a knife based on the size of the ingredients you will be cutting, such as 165mm if you are cutting carrots or potatoes, or 180mm if you are cutting a whole cabbage.
The handle shape and weight of the knife also affect how comfortable it is to use. Octagonal and decagonal shapes fit easily in the hand. Asuka, Yo, and Takumi are light, while hammered Damascus are heavier. If you are choosing based on appearance, choose Damascus. All knives have excellent sharpness, but the order of sharpness that lasts the longest is molybdenum → VG10 → SG2. You can extend the life of any knife by resharpening it.
