[2024] Three types of Damascus

I am Okudaira, the owner of "Japanese Kitchen Knife TOKU''.
We want to sell knives made in our hometown of Sakai, Osaka, so we purchase and sell knives made in Sakai from a knife manufacturer in Sakai.
We don't just sell knives, we visit a number of blacksmiths and bladesmiths in Sakai to help our customers understand knives, experience the actual work, and hear from the craftsmen. I'm here. In addition to Sakai, we also visit Seki in Gifu, Tsubame-Sanjo in Niigata, Tanegashima in Kagoshima and Katsushika in Tokyo, in an effort to deepen our understanding of the characteristics and commitment of each.

Damascus Three Types

Are you familiar with the knife pattern called Damascus?
A wavy pattern on the cutting edge or flat part of a knife is called a Damascus pattern.

Well, we have just received three new Damascus knives.
There are three types: Gyuto, Santoku, and Petty.
The Gyuto knife has an unusually long blade length of 200mm .
In addition, the tip of the blade is curved towards the cutting edge, making it easy to cut with force.
The core material used is VG10 , which has recently become the mainstream stainless steel material.
The handle is curved to fit the shape of your hand, making it easy to hold.
Of course, it also has excellent sharpness.
Santoku knives have a blade length of 180mm , which is a standard length.
This is the standard blade line of a Santoku knife, making it easy to use for home cooks.
The core material used here is also VG10 , which is the mainstream stainless steel material.
Like a chef's knife, the handle is curved to fit the shape of your hand, making it easy to hold.
This one also has excellent sharpness.
The Petty knife has a blade length of 130mm .
Most Petty knives are 120mm or 150mm , but this one is in between at 130mm . Personally, I think this length is the most convenient for a Petty knife.
This is because it can be used for detailed work and is a great size for cooking small dishes.
For detailed work, it can be used to cut fruit or add garnishes to food.
For small cooking tasks, it comes in handy when cutting sausages or dicing vegetables.
A Petty knife is a smaller version of a chef's knife, so like a chef's knife, it can be used as an all-purpose knife for a variety of ingredients.
Why not consider purchasing the three types of Damascus knives as a set, such as a chef's knife and petty knife, or a santoku knife and petty knife?
Having other knives of the same type lined up in your kitchen, all beautiful Damascus knives, is sure to inspire your desire to cook!
A good knife can enrich your food. In addition, it can be resharpened, so you can continue to use it for decades.
Please use a good knife and improve your eating habits!

Let's go to a knife store!

If you don't understand it until you see it, go to a knife store and try holding a knife. However, most stores do not allow you to try cutting the knife, so you cannot check the sharpness before purchasing."Japanese Kitchen Knife TOKU'' does not have a store, but we set up stalls at events, so please feel free to stop by if we have one in your area.If there is no knife specialty store nearby, it is a good idea to purchase from an online knife specialty store."Japanese Kitchen Knife TOKU'' has posted a video showing the actual cutting process, so please use it as reference.
