I am Okudaira, the owner of "Japanese Kitchen Knife TOKU''.
We want to sell knives made in our hometown of Sakai, Osaka, so we purchase and sell knives made in Sakai from a knife manufacturer in Sakai.
We don't just sell knives, we visit a number of blacksmiths and bladesmiths in Sakai to help our customers understand knives, experience the actual work, and hear from the craftsmen. I'm here. In addition to Sakai, we also visit Seki in Gifu, Tsubame-Sanjo in Niigata, Tanegashima in Kagoshima and Katsushika in Tokyo, in an effort to deepen our understanding of the characteristics and commitment of each.

How do you all resharpen your knives?
Some of you may be wondering, "Can knives be sharpened?"
Nowadays, many people replace their knives when they become dull, and since cheap knives can be purchased at home improvement stores and supermarkets, many people may not even know that knives can be sharpened.
Before there were home improvement centers like there are today, there were hardware stores in town that sold kitchen utensils and also sharpened knives. I've also heard stories of carpenters sharpening knives.
I think it's one option to buy a new cheap knife every time it becomes dull, but if you receive a good knife as a wedding gift, you probably don't want to replace it so easily and you want to use it for a long time. That means you'll need to sharpen it, right? But with hardware stores disappearing these days, where can you get your knife sharpened? There are some hardware stores that will sharpen your knife. Also, there are knife specialty stores that will sharpen your knife.
However, it can be a hassle for chefs and other restaurant workers if they send their knives out for sharpening and they don't get them back for a week or two, right? That's why some people need to sharpen their knives themselves. But have you ever tried to sharpen your knives yourself by watching YouTube videos, but couldn't get them to sharpen properly?
Our sharpening workshops are attended by not only complete beginners, but also people who have tried to sharpen knives themselves on YouTube but were unable to do so properly, and people who have learned at culinary school but are still unable to sharpen knives properly.
The key points in knife sharpening, such as the angle at which the knife touches the whetstone, the amount of pressure to use, and how the burrs form, can be hard to understand just by watching on a screen. Taking this into consideration, we have decided to hold face-to-face classes.
Thanks to your support, we have been receiving almost full reservations every time, despite the course capacity of six people, and we have also received positive feedback in post-course evaluations and word of mouth.
We welcome anyone who wants to try knife sharpening, or anyone who is not good at sharpening knives on their own, to join us. At our Asakusa store, we have a permanent sharpening booth, so when there are no classes, we can rent out the sharpening area. Please feel free to come and enjoy sharpening your knives. If you have any questions while sharpening, please feel free to ask, so we think that even those who are unsure about sharpening can use our services with peace of mind.

Let's go to a knife store!
Sakaitoku Knife Shop opened a store in Asakusa, Tokyo on April 5th. The store is located on the 6th floor of a building right outside the north exit of Tobu Asakusa Station. It is also about a 3- minute walk from Asakusa Station on the Tokyo Metro Ginza Line.
We also hold sharpening classes and sharpening experiences, so please feel free to stop by if you are in the area.
