Japan Kitchen Knife TOKU | From purchasing knives to maintenance

I am Okudaira, the owner of "Japanese Kitchen Knife TOKU''.

We want to sell knives made in our hometown of Sakai, Osaka, so we purchase and sell knives made in Sakai from a knife manufacturer in Sakai.

We don't just sell knives, we visit a number of blacksmiths and bladesmiths in Sakai to help our customers understand knives, experience the actual work, and hear from the craftsmen. I'm here. In addition to Sakai, we also visit Seki in Gifu, Tsubame-Sanjo in Niigata, Tanegashima in Kagoshima and Katsushika in Tokyo, in an effort to deepen our understanding of the characteristics and commitment of each.

What kind of knife should I buy?

When purchasing a knife, the first thing you wonder is, "What kind of knife should I buy?"
This is the time of year when many people start a new life, living alone. For those thinking of purchasing a new knife to mark the start of their new life, the first recommended knife is a Santoku knife, a versatile knife used to cut meat, fish, and vegetables. Most commonly, the blade length is 165mm to 180mm .
Our store stocks products that can be purchased for under 10,000 yen. We are sure that you will find a product that suits you based on weight and pattern shape, so if possible, we recommend that you check them out in store before purchasing.

Will sharpening a knife restore its sharpness?

We hold knife sharpening classes at our store, and we are often asked questions like this.
"Can I sharpen any knife so that it can cut?"
"My knives are cheap, so they can't be sharpened, right?"
The answer is, "Any knife can be sharpened and its sharpness restored."
Even if it's a 100 yen store knife.
On the other hand, if you do not sharpen your knives, even expensive ones will lose their sharpness and you will not be able to serve tasty food.
Regular sharpening of any knife will restore its sharpness and allow you to serve delicious food. I don't think there is anyone who doesn't maintain the tools they use at work. Knives are the same; maintenance = sharpening will allow you to continue using them for a long time.

I can't sharpen my knives, what should I do?

As hardware stores have been replaced by home improvement centers, there are fewer places in town that will sharpen your knives. I also hear that there are households where grandfathers or fathers used to sharpen knives, but now they are too old to do so, and there is no one left to sharpen knives.
Some hardware stores offer sharpening services, but few will return the knife on the same day.
In Tokyo, there are many knife specialty stores in Kappabashi. Many stores offer resharpening services, but many only offer services for products they sell themselves. Also, even if you can return it on the same day, it may only be for one knife. Recently, many stores will resharpen your knife, but since the resharpening itself is done at a factory, it
may take one to three weeks for you to receive it.
If you can't wait that long, why not take a knife sharpening course?
There aren't many places that teach knife sharpening, but our shop offers "knife sharpening courses" in Asakusa, Tokyo, and Sakai, Osaka. We carefully explain points that you won't learn just by watching YouTube videos , so the courses are very popular with participants.
For those who find it difficult to sharpen their knives themselves, we offer a knife sharpening service. Any knife manufacturer is welcome. Depending on the work, we can return your knife on the same day. For those who live far away, we can also resharpen your knife by mail, so please feel free to contact us if you are having trouble with a dull knife.
