【2026】Japan Knife Toku | Fish Filleting Workshop

I'm Okudaira, the owner of "Japan Knife TOKU."
I wanted to sell knives from my hometown of Sakai, Osaka, so I source and sell Sakai knives from local manufacturers.
Beyond simply selling knives, I aim for customers to understand them better. I've visited many Sakai blacksmiths and blade sharpeners, experienced their actual work, and interviewed artisans. I've also visited knife manufacturers not only in Sakai but also in Seki (Gifu), Tsubame-Sanjo (Niigata), Tanegashima, and Katsushika (Tokyo) to deepen my understanding of their unique characteristics and craftsmanship.

 

Fish Filleting Workshop

Have you ever prepared fish?
I often hear people say they've never prepared fish because they buy fillets at the supermarket, or they simply don't know how.
Anglers, on the other hand, might have experience preparing fish they've caught.
At Japan Knife TOKU, we host fish preparation workshops for those who want to learn how to prepare fish or who want to prepare various types of fish.
The fish we prepare on the day are fresh ones procured from the wholesale market. What kind of fish we'll be preparing is a surprise until the day of the workshop. We usually prepare two fish: an Aji (horse mackerel) and something else. The "something else" is also a surprise on the day. It might be sea bream or flounder, or perhaps a fish you don't usually see in supermarkets.
Sometimes the fish is easy to prepare, other times it's more challenging.
Even if you've never filleted fish before, our staff will assist you, so there's no need to worry!
You can take the filleted fish home with you to enjoy for dinner that evening!
Fresh fish is, of course, delicious, and it's even more enjoyable when you can fillet it yourself.
Since we prepare a different fish each time, repeat participation is OK! Regular participation will enable you to fillet a variety of fish.

Japan Knife TOKU opened its store in Asakusa, Tokyo, on April 5, 2025. The shop is on the 6th floor of a building right next to Tobu Asakusa Station's North Exit. It's also about a 3-minute walk from Asakusa Station on the Tokyo Metro Ginza Line.
We also offer sharpening classes and experiences, so please feel free to stop by if you're in the area.
