In Asakusa, we sell, resharpen, and provide sharpening classes for knives made by artisans nationwide, including those from Sakai, Osaka.
In this article, I will explain "how to check the sharpness of your knife" in an easy-to-understand way.
A common way to check knife sharpness is to see if it can "cut a tomato skin."
If you place the knife blade on the tomato skin and it slides, the sharpness has likely deteriorated.
If the blade eventually cuts through after being moved back and forth on the tomato skin for a while, you might think, "It's still fine!", but its sharpness has already declined, so it's "time to sharpen."
If you don't have a tomato, try cutting a sheet of A4 copy paper.
It's best to refer to the video for how to cut, but
if you hold the edge of the paper and insert the knife blade diagonally in the opposite direction of your hand,
the blade will cut into it if it's sharp.
If it's dull, the blade will slide without cutting in.
