This is a knife for cutting vegetables.
We use Shirogami No. 2 steel from Yasugi, which is also popular among professional chefs.
Because it is made of steel, it is prone to rust, but you can prevent rust by wiping off any moisture after use.
The steel has a sharp edge and brings out the flavor of the ingredients.
Instead of the commonly used magnolia handle, we use a ichii octagonal handle that fits comfortably in the hand.
By resharpening it, you can continue to use it for a long time.

Sakai knives are made by craftsmen who share the various tasks of blacksmithing, sharpening, inscribing, and attaching handles.
Each craftsman creates a masterpiece with great skill and pride.
