Our store carries a wide selection of knives made by artisans from all over Japan, including Osaka and Sakai, and we sell, resharpen, and offer sharpening classes in Asakusa.

If you went to culinary school, you would have been taught how to use a knife correctly, but for the average person, they probably only know something like, "Cut with your left hand, curling your fingertips like a fist."
Sakaitoku Knife Shop regularly holds knife sharpening classes.
At this time, a test cut is done to check whether the knife has been sharpened properly.
You can check by cutting newspaper or other materials with a knife, but many people end up moving the knife up and down and tearing the newspaper. That's right. They don't know how to use a knife properly.
The other day, I visited a food processing company to give a lesson on knife sharpening.
I also had them try a test cut here, and just like before, they tried to move the knife up and down. Naturally, the newspaper didn't cut, and ended up being torn.
This is how most people who work on food processing lines in factories move their knives up and down in the same way, which naturally causes the blade to wear down more than usual and lose its sharpness more quickly.
So, what is the correct way to use a knife?
The correct translation is "to move back and forth."
By moving it back and forth, you can cut ingredients neatly without using force.
