We want to sell knives made in our hometown of Sakai, Osaka, so we purchase and sell knives made in Sakai from a knife manufacturer in Sakai.

Yo~Takumi~

This time, we will be bringing you a product review of Yo~Takumi~.
This product is made by Yaxell in Seki City, Gifu Prefecture.
We carry two types of knives: Santoku knives and Gyuto knives.
The blade length of a Santoku knife is 17cm , while that of a Gyuto knife is 19cm .
It is slightly longer as a Santoku knife, but shorter as a Gyuto knife.
The steel is VG10 with cobalt. It features a 69- layer Damascus pattern.

The handle is made of 10 -sided laminated reinforced wood and is black in color.
In addition, the tip of the blade is a cutting type, so it has a diagonal cut.
Both the Santoku knife and the Gyuto knife are designed to look very cool.
Kiritsuke type knives have a shape similar to a Japanese sword, and yanagiba knives are popular, but recently all-purpose knives such as santoku knives and gyuto knives have also started to be sold in the kiritsuke type.

Now, when I actually held it, it was very light.
Both the Santoku knife and the Gyuto knife weigh about 240g . Even women can use them for long periods of time without difficulty.
For men who are used to cooking, this may be too light and unsatisfying.
Like other VG10 knives, the sharpness is excellent and the sharpness lasts for a long time.
This means you can cut meat, fish, and vegetables without any stress.
If you are choosing this as a knife for home use, I think you will be very satisfied with its ease of use, size, and sharpness.

Regarding maintenance, for regular maintenance, simply wash it with a neutral detergent after use.
The handle is made of laminated reinforced wood, so it is stain-resistant and water-resistant, so you can wash it with detergent along with the blade. It is best not to put it in the dishwasher. The blade may be damaged if it comes into contact with other dishes. After washing the knife, wipe off any moisture with a dry cloth and store it in a knife stand or similar.
If the knife loses its sharpness, you can restore it by sharpening it with a sharpener, but we recommend sharpening it with a whetstone every so often . If you cannot sharpen it yourself, have it resharpened at a knife specialty store.
It depends on how you use it, but for a typical household knife, it's a good idea to have it sharpened about once a year.
Since the surface has a Damascus pattern, care must be taken when sharpening it with a whetstone. There is no problem if you sharpen only the tip of the blade, but if you sharpen the cutting edge by removing any excess material, the Damascus pattern may change.
When purchasing a Damascus knife, it is best to keep in mind that the appearance of the Damascus pattern will change depending on how it is maintained.
