How to Care for Your Kitchen Knives: A Guide for 2026
Hello, I'm Okudaira, the owner of Japan Knife TOKU.
Located in Asakusa, Tokyo, we sell Japanese knives crafted by skilled artisans from Sakai, Osaka, and other regions of Japan. We also offer knife sharpening, repairs, and sharpening classes.
Do Stainless Steel Knives Rust?
Many people believe that stainless steel knives never rust.
During our knife sharpening classes, I often ask participants, "Can stainless steel knives rust?" Many respond with surprise, saying, "But stainless steel knives don't rust, do they?"
The truth is that stainless steel knives are rust-resistant, not rust-proof.
How Should You Care for a Knife After Use?
What do you usually do after using a knife?
-
Leave it in the sink with the dishes and wash it later?
-
Wash it with a sponge and mild dish soap, then leave it standing in a dish rack?
-
Put it in the dishwasher along with the other dishes?
Actually, none of these are ideal ways to care for your knives!
After using a knife, wash it with a sponge and mild dish soap. For safety, hold the knife carefully and keep your fingers away from the cutting edge. Avoid putting pressure on the blade while washing it.
After washing, thoroughly wipe off all moisture with a clean, dry towel.
Then, store the knife safely in a knife stand or another suitable holder.
Avoid using a dishwasher, as high temperatures, strong detergents, and contact with other items can damage the blade or handle.
Daily Care Is Basically the Same for Stainless Steel and Carbon Steel Knives
Many people avoid carbon steel knives because they rust easily. However, stainless steel knives also need to be kept clean and dry.
Whether you use a carbon steel knife or a stainless steel knife, the basic care is the same: wash it after use and thoroughly dry it with a clean towel before storing it.
Carbon steel knives do require a little more attention because they are more prone to rust. However, with proper care, they are not as difficult to maintain as many people think.
How Should You Store a Knife for a Long Period Without Using It?
Some people may not use knives such as deba (fish filleting knives) or yanagiba (sashimi knives) very often.
If you plan to store a carbon steel knife for an extended period, applying a thin layer of food-safe knife maintenance oil can help prevent rust.
Camellia oil specifically intended for knife care is a good option. Avoid using ordinary cooking oils for long-term storage, as they can oxidize and become sticky over time.
After applying the oil, wrap the knife in dry newspaper or suitable protective paper and store it in a dry place.
